Dhuska is a popular deep-fried food enjoyed throughout Jharkhand, India. The dish is a delicacy of Jharkhandi cuisine. The primary components in this savory fried bread dish are powdered rice and powdered chana dal. The bread is subsequently deep-fried. It is commonly served with any sauce or chutney. Dhuska is often cooked in market-area stalls and consumed as a snack; it is rarely encountered in larger restaurants.

Traditional Recipe of Dhuska

Ingredients for Dhuska:

2 cup basmati rice
4 green chilli
4 curry leaves
1 handful coriander leaves
1 pinch turmeric
1 cup chana dal
5 cloves garlic
2 teaspoon salt
1 medium onion
1/3 cup water

How to make Dhuska:

Step 1: Soak rice and dal.
For this simple Dhuska recipe, soak the rice and dal for 4-5 hours.

Step 2: Grind soaking rice and dal.
Grind with green chillies, garlic, and a little water.

Step 3: Add seasoning to the Dhuska batter.
The batter should not be excessively thick or runny. Add little turmeric and salt to it.

Step 4: Preheat oil in a wok.
Heat oil in a wok. It should not be extremely heated. Take a circular spoon that we use to make dosa.

Step 5: Gently drop the Dhuska batter into oil.
With a spoon, gently transfer the batter to the oil. Fry till golden on both sides.

Step 6: Serve your handmade Dhuska.
Serve Dhuska hot and boiling.
